Traditionally harvested in the Guerande, Camargue, and Île de Ré regions of France, Fleur de Sel is the purest form of salt, derived directly from the evaporation of seawater, unlike table salt and kosher salt, which come from inland salt deposits.
This premium-quality Fleur de Sel is hand-harvested on the salt marshes of Île de Ré, in the Charente-Maritime region of western France. It is unprocessed, unrefined, unadulterated, and gluten-free. With its high moisture content and unique crystal shape (more compact than flaky salts, yet not as granular as fine or coarse salt), Fleur de Sel is a truly exceptional finishing salt.
Highly concentrated in minerals and lower in sodium than regular salt, this Fleur de Sel from Straight from France will linger in your mouth, adding a delightful touch to fresh tomatoes, salads, fish, meat, roasted vegetables, and even French delicacies like foie gras, as well as fruits, caramels, chocolates, and desserts.
The Artisanal Process of Harvesting Fleur de Sel
One method of gathering sea salt is to draw seawater into marsh basins and allow the water to evaporate, leaving behind the dissolved salt. As the water evaporates, most of the salt precipitates out on the bottom of the marsh (and is later collected as ordinary sea salt), but some salt crystals float on the surface of the water, forming a delicate crust of intricate pyramidal crystals. This is Fleur de Sel, or "flower of salt."
The delicacy of Fleur de Sel requires that it be harvested by hand, using traditional methods and tools. Its flavor is unlike any other and far superior to regular sea salt.
Natural and Unprocessed Goodness
Straight from France's Fleur de Sel is all-natural, containing nothing but the pure Fleur de Sel crystals. Because we work with small producers, we have more control over the production process and can ensure that our Fleur de Sel is not inadvertently mixed with coarser salt, as can happen with more industrialized brands.
Fleur de Sel is not used in the cooking process but is instead added as a "finishing salt" just before serving, to enhance the flavor of eggs, fish, meat, vegetables, and delicacies like foie gras. It can also be used to make chocolate and caramel.
